Sountrimades

Sountrimades are made with fried olives and are an excellent meze, ideal to enjoy with wine or tsikoudia.

In some villages in Crete, they prepare the olives savore-style. They fry “psarolies” in olive oil, add rosemary, let them cook slowly, and then deglaze with wine vinegar.

Ingredients:

  • olives

  • tomato, chopped or cherry tomatoes

  • 1 sprig of rosemary

  • olive oil

  • 3 cloves of garlic

  • 1 wine glass of orange juice and some orange slices

Method:
In a deep frying pan, add the olive oil, olives, tomato, rosemary, and garlic. Mix well and let it simmer for 10 minutes.
Then add the orange slices, pour in the orange juice, and let it cook gently for another 5 minutes. Your sountrimades are ready.

Cretan dialect notes:

  • psarolies or psares olives: local Cretan wrinkled black olives

  • arismári: rosemary
